The leg muscle, the top sirloin (quasi) is splitted in two parts (heart and sirloin needle), 100% fully denuded of all trace of membrane and fat, the heart and the sirloin needle are perpendicullarly cut toward meat grain, the medallion’s pieces are portionned 85g and classified to meet market needs.
